LOCAL CHEF WINS PEPIN HEIGHTS’ CIDER RECIPE CHALLENGE

Apple Valley resident and self-proclaimed “Apple Geek” joins judging panel

MINNEAPOLIS, November 2005 – Pepin Heights, Minnesota’s largest apple orchard and the nation’s top grower and distributor of quality HoneyCrisp apples, has named Adam Droski, executive chef at Bar Abilene in Minneapolis, the grand-prize winner of its “Pepin Heights’ Cider Recipe Challenge.” Randy Kustanowitz, sous chef at Aubergine Catering, also was named as a finalist in the dessert category.

Apple Cider

This fall, Minnesota professional chefs were invited to submit their original recipes, using any flavor Pepin Heights Cider or Pepin Heights Sparkling Apple Cider as an ingredient. Pepin Heights also held a search for an “Apple Geek” – someone who loves apples, cider and food – to join its judging panel.

Droski’s recipe for Pepin Heights Cider Brined Pork Chops with Cinnamon Mole, Whipped Plantains & Apple Chutney impressed the judges, which included Steven Brown, executive chef at Restaurant Levain in Minneapolis; Dennis Courtier, owner and president of Pepin Heights; and Brenda Peick, an Apple Valley resident and self-proclaimed “apple geek.” Droski won $500 and a variety of Pepin Heights Cider products for his efforts.
