Tzompote--Winner, Dessert Category 2005 Pepin Heights Recipe Challenge
  • 2 lbs carrots
  • 1 cup prunes
  • 1 cup dried apricots
  • 2 lbs Pepin heights honey crisp apples
  • 4 cups Pepin heights cider
  • 1/2 cup brown sugar
  • 1/2 tsp cayenne powder

Directions:  Peel carrots and cut into 1/2 inch chunks.  Peel and core apples and cut into 1/2 inch chunks.  On stove in saucepan mix cider, sugar and cayenne and stir over medium heat for 3-5 minutes to blend sugar and cider.

In a two-inch baking pan, combine cider mixture, fruit and carrots and cover with aluminum foil tightly and bake in 350 degree oven for approximately 2.5-3 hrs, until carrots are soft.

This healthful dessert can be served cold or warm with whipped cream.
